Optional Garnish
  • 1/4 cup Fresh basil or parsley A handful of chopped herbs.

Method
 

Instructions
  1. Preheat oven to 400°F.
  2. In a medium bowl, toss cherry tomatoes with honey, olive oil, thyme, salt, and pepper.
  3. Arrange tomatoes on a parchment-lined baking sheet and roast for 20 minutes.
  4. Allow roasted tomatoes to cool for 5 minutes.
  5. In a food processor, combine feta, cream cheese, and Greek yogurt, pulsing until smooth.
  6. Drizzle in lemon juice and olive oil, pulsing until fluffy.
  7. Adjust salt and pepper to taste.
  8. Spoon whipped feta into a serving bowl, making a well in the center for tomatoes.
  9. Top with roasted tomatoes and garnish with pine nuts and fresh basil.
