Crockpot Scalloped Potatoes and Ham recipe

  • 4 cups sliced potatoes
  • 2 cups diced cooked chicken or turkey
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup heavy cream or milk
  • 1 cup chicken broth
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme (or your favorite herb)

Instructions

  1. Layer half of the sliced potatoes in the bottom of the crockpot.
  2. Add half of the chicken or turkey, half of the onion, and half of the garlic.
  3. Sprinkle with salt, pepper, and thyme.
  4. Add half of the cheese and repeat with the remaining potatoes, chicken, onion, garlic, salt, pepper, thyme, and cheese.
  5. Pour the heavy cream and chicken broth over the top.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours, until potatoes are tender and creamy.
