- 4 cups sliced potatoes
- 2 cups diced cooked chicken or turkey
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup heavy cream or milk
- 1 cup chicken broth
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme (or your favorite herb)
Instructions
- Layer half of the sliced potatoes in the bottom of the crockpot.
- Add half of the chicken or turkey, half of the onion, and half of the garlic.
- Sprinkle with salt, pepper, and thyme.
- Add half of the cheese and repeat with the remaining potatoes, chicken, onion, garlic, salt, pepper, thyme, and cheese.
- Pour the heavy cream and chicken broth over the top.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until potatoes are tender and creamy.
