  • 2 lbs Russet potatoes choose starchy potatoes for soft, creamy layers
  • 1 medium Yellow onion thinly sliced
  • 2 cloves Garlic minced
For the Creamy Cheese Sauce
  • 4 tbsp Butter melts smoothly
  • 1/4 cup All-purpose flour thickens the sauce
  • 2 cups Whole milk use full-fat for creaminess
  • 2 cups Sharp cheddar cheese grated
  • to taste Salt
  • to taste Black pepper
Optional Topping
  • 1/4 cup Fresh parsley chopped
  • 1/2 cup Breadcrumbs for added crunch

Method
 

Preparation
  1. Preheat the oven to 375°F.
  2. Peel and slice russet potatoes and yellow onion into 1/8-inch rounds.
Making Cheese Sauce
  1. In a medium saucepan, melt butter over medium heat for 2 minutes.
  2. Sprinkle flour over melted butter, whisking constantly for 1-2 minutes.
  3. Gradually add whole milk, whisking until thickened, about 3-4 minutes.
  4. Remove from heat, stir in cheddar cheese until melted, and season with salt and pepper.
Baking
  1. In a greased baking dish, layer potato-onion slices and cheese sauce, ending with sauce.
  2. Bake for 45 minutes at 375°F until golden brown.
  3. Let rest for 10 minutes before serving, garnish with chopped parsley.
