Preparation
- Preheat the oven to 375°F.
- Peel and slice russet potatoes and yellow onion into 1/8-inch rounds.
Making Cheese Sauce
- In a medium saucepan, melt butter over medium heat for 2 minutes.
- Sprinkle flour over melted butter, whisking constantly for 1-2 minutes.
- Gradually add whole milk, whisking until thickened, about 3-4 minutes.
- Remove from heat, stir in cheddar cheese until melted, and season with salt and pepper.
Baking
- In a greased baking dish, layer potato-onion slices and cheese sauce, ending with sauce.
- Bake for 45 minutes at 375°F until golden brown.
- Let rest for 10 minutes before serving, garnish with chopped parsley.
