  • 1/2 cup Fresh parsley Chopped.
  • 2 teaspoons Fresh thyme
  • 1/4 cup Butter For sautéing.
  • 1 cup Chicken or seafood stock Good-quality stock.
  • 1 large Egg
  • to taste Salt and freshly ground black pepper Season to taste.

  • 2 tablespoons Sage leaves Finely chopped or used whole.
  • 4 slices Crumbled bacon For extra crunch.

Method
 

Cooking Instructions
  1. Preheat to 350°F. Generously butter a 9×13" baking dish.
  2. Melt butter in a skillet over medium heat and cook onions, celery, and garlic for 4–5 minutes.
  3. In a separate pan, cook bay scallops for 2–3 minutes until just opaque.
  4. Transfer breadcrumbs, sautéed veggies, scallops, parsley, thyme, beaten egg, and stock into a bowl; season with salt and pepper.
  5. Spoon mixture into the prepared dish and bake at 350°F for 25–30 minutes.
  6. Allow resting for 5–10 minutes before serving warm.
