Cooking Instructions
- Preheat to 350°F. Generously butter a 9×13" baking dish.
- Melt butter in a skillet over medium heat and cook onions, celery, and garlic for 4–5 minutes.
- In a separate pan, cook bay scallops for 2–3 minutes until just opaque.
- Transfer breadcrumbs, sautéed veggies, scallops, parsley, thyme, beaten egg, and stock into a bowl; season with salt and pepper.
- Spoon mixture into the prepared dish and bake at 350°F for 25–30 minutes.
- Allow resting for 5–10 minutes before serving warm.
