  • Cinnamon or cardamom powder to sprinkle for flavor

Equipment

  • loaf pan
  • Mixing bowls
  • whisk
  • Spatula

Method

For the Cake Batter
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan with butter or nonstick spray.
  2. Place red dates in a bowl, cover with hot water, and soak for 10 minutes until plump. Drain well, then finely chop or puree.
  3. In a medium bowl, whisk together all-purpose flour, baking powder, and brown sugar until uniformly combined and free of lumps.
  4. In a separate bowl, beat eggs lightly, then whisk in vegetable oil, milk, and vanilla extract until smooth.
  5. Gently fold the date paste into the wet mixture, then pour it into the dry ingredients. Stir until just combined; avoid overmixing.
  6. Transfer the batter into your prepared pan, smoothing the top. Bake for 35–40 minutes until a toothpick comes out clean.
  7. Remove the pan from the oven and let the cake cool in the pan for 10 minutes. Then, invert onto a wire rack to cool completely.
  8. Slice the cake into even pieces and enjoy your homemade treat alongside tea or coffee.
