For the Cake Batter
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan with butter or nonstick spray.
- Place red dates in a bowl, cover with hot water, and soak for 10 minutes until plump. Drain well, then finely chop or puree.
- In a medium bowl, whisk together all-purpose flour, baking powder, and brown sugar until uniformly combined and free of lumps.
- In a separate bowl, beat eggs lightly, then whisk in vegetable oil, milk, and vanilla extract until smooth.
- Gently fold the date paste into the wet mixture, then pour it into the dry ingredients. Stir until just combined; avoid overmixing.
- Transfer the batter into your prepared pan, smoothing the top. Bake for 35–40 minutes until a toothpick comes out clean.
- Remove the pan from the oven and let the cake cool in the pan for 10 minutes. Then, invert onto a wire rack to cool completely.
- Slice the cake into even pieces and enjoy your homemade treat alongside tea or coffee.
