How to Make Eggplant Parmesan
- Slice medium eggplants into ½-inch rounds, sprinkle both sides with salt, and let rest 20 minutes to remove moisture. Pat dry thoroughly.
- Dust each slice with flour, dip in beaten eggs, and coat with breadcrumbs until evenly covered.
- Heat ¼-inch vegetable oil in skillet to 350°F, fry slices until golden brown, about 2 minutes per side; drain on paper towels.
- Warm olive oil over medium heat, cook minced garlic (1 minute) until fragrant, then stir in crushed tomatoes and simmer 10 minutes.
- Stir in chopped fresh basil, season with salt and pepper to taste, and simmer 5 more minutes.
- Spread a thin sauce layer in a baking dish, arrange eggplant slices, add dollops of ricotta, then sprinkle mozzarella and parmesan; repeat layers once more.
- Bake uncovered at 375°F for 20–25 minutes until cheese is bubbly and golden brown on top, then let rest 5 minutes before serving.
