How to Make Eggplant Parmesan
  1. Slice medium eggplants into ½-inch rounds, sprinkle both sides with salt, and let rest 20 minutes to remove moisture. Pat dry thoroughly.
  2. Dust each slice with flour, dip in beaten eggs, and coat with breadcrumbs until evenly covered.
  3. Heat ¼-inch vegetable oil in skillet to 350°F, fry slices until golden brown, about 2 minutes per side; drain on paper towels.
  4. Warm olive oil over medium heat, cook minced garlic (1 minute) until fragrant, then stir in crushed tomatoes and simmer 10 minutes.
  5. Stir in chopped fresh basil, season with salt and pepper to taste, and simmer 5 more minutes.
  6. Spread a thin sauce layer in a baking dish, arrange eggplant slices, add dollops of ricotta, then sprinkle mozzarella and parmesan; repeat layers once more.
  7. Bake uncovered at 375°F for 20–25 minutes until cheese is bubbly and golden brown on top, then let rest 5 minutes before serving.
