Baking and Assembling
- Preheat to 350°F (175°C) and position rack in center; allow oven to heat for at least 10 minutes.
- In a medium bowl, whisk together all-purpose flour, granulated sugar, baking powder, and salt until combined.
- Add softened unsalted butter, eggs, and whole milk to dry mix; beat on medium speed for about 2 minutes until smooth.
- Pour batter evenly into two 8-inch pans and bake for 20–25 minutes or until a toothpick emerges clean.
- Chill bowl and beaters, then whip heavy whipping cream, powdered sugar, and vanilla extract on high until soft peaks hold.
- Once cooled, slice each layer horizontally into even tiers.
- Spread whipped cream evenly over each tier, stacking carefully as you go.
- Arrange sliced strawberries, whole blueberries, and optional raspberries on top.
