- In a medium bowl, whisk ground sumac, lemon juice, olive oil, minced garlic, rosemary, honey, salt, and pepper until smooth.
- Coat lamb chops thoroughly, cover bowl, refrigerate for at least 30 minutes (or up to overnight).
- Preheat grill or grill pan to medium-high (around 375°F) for 10 minutes and oil grates lightly.
- Place chops on hot grill and cook for 4–5 minutes per side, until golden brown with an internal temperature of 135°F (medium-rare).
