How to Make Roasted Chicken Stuffed with Bacon and Celery
  1. Preheat Oven: Warm your oven to 375°F (190°C) with the rack set in the center.
  2. Cook Bacon: Heat a skillet over medium flame, then sauté bacon until crispy (about 8 minutes). Transfer bacon to paper towels to drain excess fat.
  3. Sauté Vegetables: In reserved bacon fat, gently cook chopped onion, minced garlic, and sliced celery for 5 minutes until softened and fragrant.
  4. Mix Filling: Chop the crispy bacon and combine with sautéed vegetables, fresh thyme, salt, and pepper in a bowl.
  5. Stuff Chicken: Carefully loosen the skin over the breast, spoon bacon-celery mixture under the skin and into cavity. Tie the legs for even cooking.
