How to Make Ribeye Roast
  1. Preheat the oven to 450°F and let your seasoned roast rest at room temperature for 30 minutes.
  2. Use paper towels to pat the roast completely dry, then season with kosher salt and black pepper.
  3. Warm a heavy, oven-safe skillet over high heat and add a drizzle of olive oil.
  4. Place the roast fat-side down and sear 3-4 minutes per side for a golden-brown crust.
  5. Transfer the seared roast to a rack in a roasting pan, tucking garlic cloves and rosemary around it.
  6. Place in preheated oven at 450°F for 15 minutes, then reduce heat to 350°F and roast for 60-75 minutes.
