  3. Stir in chopped figs into the steak pan for 1–2 minutes, letting their sweet juices blend into the meat.
  4. Brush rolls with olive oil or butter, toast on a griddle over medium-high heat until edges are golden, about 2 minutes per side.
  5. On one toasted roll, pile the steak and fig mixture, then top with caramelized onions and cheese slices.
  6. Cover sandwich or press gently, return to skillet on low heat for 2 minutes until cheese melts.
  7. Slice sandwich in half, garnish with fig wedges or fresh thyme, and enjoy immediately.
