- Pat crown roast dry with paper towels, then brush generously with the herb rub on all sides.
- Use kitchen twine to tie the racks into a circular crown, tucking the rib bones evenly.
- Place the crown on a rack in a roasting pan; bake at 375°F for 25 minutes, then reduce heat to 350°F and roast 45–55 more minutes until golden crust.
