How to Make Lemon Garlic Turkey Kofta
- In a large bowl, gently mix ground turkey, minced garlic, parsley, grated onion, lemon zest and juice, cumin, coriander, salt, and pepper until just combined and clingy.
- Cover the mixture, then refrigerate for 15–20 minutes.
- Preheat a grill or nonstick skillet over medium-high heat (around 400°F) and brush lightly with oil.
- With damp hands, divide the chilled mixture into 8 portions and roll into uniform ovals or balls.
- Place koftas on the hot surface, cooking 4–5 minutes per side until golden brown and cooked through.
- Transfer the koftas to a plate and let them rest covered for 5 minutes.
