Method
 

Preparation
  1. In a medium bowl, whisk honey, soy sauce, olive oil, garlic, and freshly ground pepper until silky smooth, about 30 seconds.
  2. Place chicken thighs in a shallow dish, pour marinade over, and cover. Chill for at least 20 minutes or overnight.
Grilling Skewers
  1. Preheat the grill to medium-high (about 400°F) and lightly oil the grill grates.
  2. Slide chicken pieces onto soaked skewers, leaving ½-inch gaps in between.
  3. Arrange skewers on the grill and cook for 4–5 minutes per side, basting occasionally with marinade until charred.
  4. Transfer skewers to a platter, let rest for 5 minutes, and top with parsley and a squeeze of lemon.
