- In a medium bowl, whisk honey, soy sauce, olive oil, garlic, and freshly ground pepper until silky smooth, about 30 seconds.
- Place chicken thighs in a shallow dish, pour marinade over, and cover. Chill for at least 20 minutes or overnight.
Grilling Skewers
- Preheat the grill to medium-high (about 400°F) and lightly oil the grill grates.
- Slide chicken pieces onto soaked skewers, leaving ½-inch gaps in between.
- Arrange skewers on the grill and cook for 4–5 minutes per side, basting occasionally with marinade until charred.
- Transfer skewers to a platter, let rest for 5 minutes, and top with parsley and a squeeze of lemon.
