- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss the peeled, cut parsnips with melted butter, honey, olive oil, salt, and freshly ground black pepper until evenly coated.
- Spread the parsnips in a single layer on the prepared baking sheet, leaving space between sticks.
- Roast for 20–25 minutes, flipping once halfway through, until parsnips turn golden brown and caramelized.
- During the last 5 minutes, drizzle an extra tablespoon of honey over the parsnips and gently toss.
- Remove from oven and transfer to a serving platter; sprinkle with fresh thyme leaves and chopped parsley.
