  • 1 pound parsnips peeled and cut into sticks
  • 1/4 cup unsalted butter melted
  • 3 tablespoons honey drizzled
  • 1 tablespoon olive oil light drizzle
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper freshly ground

  • 1 tablespoon fresh thyme for garnish
  • 1/4 cup chopped parsley for garnish

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the peeled, cut parsnips with melted butter, honey, olive oil, salt, and freshly ground black pepper until evenly coated.
  3. Spread the parsnips in a single layer on the prepared baking sheet, leaving space between sticks.
  4. Roast for 20–25 minutes, flipping once halfway through, until parsnips turn golden brown and caramelized.
  5. During the last 5 minutes, drizzle an extra tablespoon of honey over the parsnips and gently toss.
  6. Remove from oven and transfer to a serving platter; sprinkle with fresh thyme leaves and chopped parsley.
