How to Make Cheesy Garlic Mashed Potatoes
- Peel and cut russet potatoes into 1-inch cubes. Cover with cold water in a large pot.
- Bring potatoes to a rolling boil over medium-high heat. Simmer for 15-20 minutes until fork-tender.
- Drain potatoes in a colander, return to pot, and heat on low for 1 minute to evaporate excess moisture.
- In a small saucepan, melt butter over low heat. Add minced garlic and cook for 1-2 minutes until fragrant.
- Heat milk or cream until steamy but not boiling.
- Add garlic butter and warm milk to potatoes. Mash until smooth and creamy, about 2 minutes.
- Stir in cheddar and parmesan until melted and gooey.
- Transfer to a serving bowl. Garnish with parsley and freshly ground black pepper before serving hot.
