- Preheat the oven to 325°F and grease a 9" springform pan. Line the bottom with parchment.
- Stir together the graham cracker crumbs, melted butter, and sugar until sandy.

- Cook the diced apples with the brown sugar, cinnamon, and lemon juice until tender.
- Sprinkle cornstarch over the apples and stir until juices thicken, then cool to room temperature.
- In a mixer, blend the cream cheese, sugar, and sour cream until smooth. Add eggs one at a time.
- Pour half of the cheesecake batter over the crust, spoon apple pie filling in the center, then cover with remaining batter.
- Bake on a baking sheet for 50-60 minutes, until edges are set and center jiggles slightly.
- Let cool to room temperature, then refrigerate for 4 hours or overnight.
