Method
 

For the Sandwiches
  1. Preheat oven to 375°F.
  2. Generously massage boneless lamb leg with truffle oil, minced garlic, rosemary, salt, and black pepper.
  3. Position the seasoned lamb on a rack in a roasting pan and roast for 25–30 minutes until internal temperature hits 135°F.
  4. Remove lamb from the oven and tent with foil for 10 minutes, then slice thinly against the grain.
  5. Assemble sandwiches by spreading goat cheese on bread, layering arugula, lamb slices, a drizzle of truffle oil, and black pepper.
For the Almond Sweet Potatoes
  1. In a large bowl, coat sweet potato wedges and sliced almonds with melted butter, salt, pepper, and honey or maple syrup.
  2. Spread on a baking sheet and roast at 375°F for 20–25 minutes until edges are golden brown and tender-crisp.
