How to Make Garlic & Herb Roasted Leg of Lamb
- Preheat oven to 425°F, positioning the rack in the center.
- Pat the leg of lamb dry with paper towels, trim excess fat, and tie with kitchen twine.
- Combine minced garlic, chopped rosemary, thyme, olive oil, salt, and pepper until a thick paste forms.
- Rub the herb-garlic mixture evenly over the leg.
- Place lamb fat-side up in a roasting pan and bake at 425°F for 20 minutes.
- Lower oven to 350°F and continue roasting for 1 to 1¼ hours until a meat thermometer reads 135°F.
- Tent the lamb loosely with foil and let it rest for 15 minutes.
- Transfer roasting pan juices to a skillet, add red wine, and simmer for 5 minutes until sauce thickens.
- Strain into a bowl and whisk in butter until smooth.
