For the Zucchini Layers
  • 3–4 medium Zucchini Choose medium-sized zucchinis for even, tender slices.

For the Beef Filling
  • 1 pound Ground Beef Use lean beef for rich flavor.
  • 1 medium Onion Finely chopped.
  • 2 cloves Garlic Minced.
  • 1 tablespoon Italian Seasoning

For the Cheese Mixture
  • 15 ounces Ricotta Cheese The star ingredient.
  • 1 large Egg Beaten.
  • ½ cup Parmesan Cheese Grated.
  • ¼ cup Fresh Parsley Chopped.
For Assembling and Baking
  • 2 cups Marinara Sauce Your favorite tomato sauce.
  • 1 cup Mozzarella Cheese Shredded.

Method
 

Prep the Zucchini
  1. Slice zucchini lengthwise into 1/8-inch strips.
  2. Sprinkle slices with salt and rest on paper towels for 15 minutes.
Cook the Beef
  1. Heat oil in a skillet over medium-high heat and brown the ground beef.
  2. Add chopped onion and minced garlic; sauté until fragrant.
Prepare Cheese Mixture
  1. In a mixing bowl, whisk ricotta, beaten egg, and grated Parmesan until smooth.
  2. Stir in chopped parsley.
Assemble and Bake
  1. Preheat oven to 375°F. Spread marinara in a baking dish.
  2. Layer zucchini, beef filling, cheese mixture, and sauce. Top with mozzarella.
  3. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 10 minutes.
