Cooking Instructions
- Preheat your oven to 400°F.
- Prepare the squash halves by brushing each with melted butter and an optional drizzle of maple syrup. Arrange cut-side up on a baking sheet and season lightly with salt and pepper.
- Roast the squash for 25–30 minutes until tender and golden brown. Remove and cool slightly.
- In a large skillet over medium heat, warm olive oil and cook onions until translucent, about 3 minutes. Add garlic and thyme until fragrant.
- Add ground turkey to the skillet, breaking it up as it cooks until browned, about 5–7 minutes. Stir in sliced mushrooms and cook until golden.
- Mix in diced apple and breadcrumbs, stirring until the filling binds. Season generously with salt and pepper.
- Spoon the warm turkey mixture into each acorn squash half, packing gently.
- Return the stuffed squash to the oven and bake for 10–12 minutes until heated through and topped develop a light golden crust.
