Ingredients
  

For the Sliders
  • 2 cups Sweet Potatoes roasted and mashed
  • 1 can Black Beans drained and rinsed
  • 1 medium Red Onion finely chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 1 cup Breadcrumbs gluten-free option
  • 1 large Egg acts as a binder
  • to taste Salt
  • to taste Black Pepper
For Serving
  • 4 pieces Slider Buns soft and slightly toasted
  • 1 medium Avocado sliced
  • 1/4 cup Fresh Cilantro for topping
  • to taste Sliced Jalapeños optional
  • 1/2 cup Chipotle Mayo or Yogurt Sauce for spreading

Method
 

For the Patties
  1. Preheat oven to 400°F and line a baking sheet with parchment. Spread cubed sweet potatoes evenly, drizzle with oil, and roast until tender and lightly browned, about 25 minutes.
  2. In a large bowl, mash roasted sweet potatoes with black beans. Add garlic, red onion, cumin, chili powder, breadcrumbs, egg, salt, and pepper; stir into a cohesive mixture.
  3. Scoop quarter-cup portions and shape into 2-inch sliders. Press edges gently to smooth. Place on a plate, cover, and chill 15 minutes.
For Cooking
  1. Warm a tablespoon of oil in a skillet over medium heat. Add patties and cook until crisp and golden, about 4 minutes per side.
For Assembly
  1. Split slider buns and toast cut-side down in the same skillet until edges turn golden, about 1–2 minutes.
  2. Spread chipotle mayo on bottom buns, and layer patties with avocado slices, cilantro, and jalapeños.
