  • 8 ounces smoked salmon thinly sliced
  • 4 cups arugula fresh
  • 2 tablespoons capers rinsed
  • 1 cup cherry tomatoes halved
  • 1/4 medium red onion thinly sliced
For the Dressing
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons extra virgin olive oil good quality
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey

Method
 

Preparation
  1. Gently rinse arugula leaves under cold water, then spin or pat dry.
  2. Thinly slice smoked salmon if needed and arrange on a plate.
  3. Halve cherry tomatoes and thinly slice red onion rings.
  4. Whisk lemon juice, olive oil, Dijon mustard, honey, salt, and pepper in a small bowl.
  5. In a large bowl, combine arugula, tomatoes, and onions. Drizzle with dressing and toss gently.
  6. Arrange salmon strips atop the dressed greens and sprinkle capers evenly.
  7. Divide the salad onto individual plates and garnish with extra lemon zest and cracked pepper.
