Preparation Steps
- Marinate your beef with red wine, garlic, and thyme for at least 4 hours (or overnight) in the fridge.
- Sear the beef pieces in a hot skillet with oil until golden brown on all sides, about 2–3 minutes per side.
- Combine the seared beef, beef broth, tomato paste, and marinade in your slow cooker bowl, stirring gently.
- Add pearl onions, baby carrots, and cremini mushrooms evenly around the beef.
- Cook on Low for 8 hours (or High for 4 hours) until beef is tender and sauce is glossy.
- Stir in butter until melted and glossy, then sprinkle with parsley and a pinch of salt just before serving.
