- Pat shrimp dry and season with salt and pepper. Let rest.
- Heat a wok or large skillet over medium-high heat for about 1 minute.
- Add oil and coat evenly. Add shrimp in a single layer and sear for 1–2 minutes per side until pink and opaque.
- Transfer shrimp to a plate. Add garlic and ginger to the wok, cooking for about 30 seconds until fragrant.
- Add snow peas and stir-fry for 1–2 minutes until bright green and crisp-tender.
- Whisk soy sauce, sesame oil, rice vinegar, and honey or brown sugar in a bowl.
- Return shrimp to the skillet and pour sauce over. Toss for about 30 seconds until glossy.
- Serve over rice, noodles, or enjoy as is. Garnish with green onions and sesame seeds.
