For the Potato Crust
- Slice potatoes into 1/8-inch rounds.
- Arrange potato slices in overlapping rows over the seafood filling.
- Brush potatoes with olive oil or melted butter, then season with salt and herbs if using.
- Bake at 375°F (190°C) for 25–30 minutes until the potato crust is golden and crisp.
- Let the pie rest for 5 minutes, then garnish with parsley and serve.
