For the Seafood Filling
  • 2 cups Mixed seafood A blend of shrimp, scallops, and white fish
  • 1 medium Onion Finely diced
  • 2 cloves Garlic Minced
  • 1 tablespoon Fresh parsley Chopped
  • 1 cup Fish stock or broth
  • 1 tablespoon Lemon juice
  • 2 tablespoons Butter For sautéing
  • to taste Salt and pepper
For the Potato Crust
  • 4 medium Potatoes Russet or Yukon Gold
  • 2 tablespoons Olive oil or melted butter For brushing
  • 1 teaspoon Fresh thyme or rosemary Optional herbs
  • to taste Salt

Method
 

For the Seafood Filling
  1. Preheat the oven to 375°F (190°C).
  2. Melt butter in a skillet over medium heat, add diced onion and garlic, cooking until softened, about 3–4 minutes.
  3. Add mixed seafood, stirring gently until opaque, about 5–6 minutes.
  4. Stir in fish stock and lemon juice, simmer until reduced, about 4–5 minutes.
  5. Season with salt, pepper, and chopped parsley before transferring to a baking dish.
For the Potato Crust
  1. Slice potatoes into 1/8-inch rounds.
  2. Arrange potato slices in overlapping rows over the seafood filling.
  3. Brush potatoes with olive oil or melted butter, then season with salt and herbs if using.
  4. Bake at 375°F (190°C) for 25–30 minutes until the potato crust is golden and crisp.
  5. Let the pie rest for 5 minutes, then garnish with parsley and serve.
