Ingredients
  

For the Vegetables
  • 2 medium Eggplants Choose firm for creamy layers.
  • 2 large Red Bell Peppers Roast until charred.
  • 1 medium Onion Finely chopped.
  • 3 cloves Garlic Minced.
For the Sauce
  • 2 tablespoons Olive Oil Extra virgin for cooking.
  • 2 tablespoons Tomato Paste Adds tang and body.
  • 1 pinch Ground Cinnamon Evokes Mediterranean flavors.
  • 1 dash Nutmeg Freshly grated for béchamel.
For the Béchamel Topping
  • 4 tablespoons Butter Creates the creamy base.
  • 1/4 cup All-Purpose Flour Thickens the béchamel.
  • 2 cups Milk Warm for smooth finish.
  • 1/2 cup Grated Parmesan Cheese For a golden crust.
Seasonings & Garnishes
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper To taste.
  • 1/4 cup Fresh Parsley or Oregano For garnishing.

Method
 

Preparation
  1. Preheat oven to 400°F. Arrange sliced eggplant and halved red peppers on a lined sheet, drizzle with olive oil, and season lightly with salt.
  2. Roast the red peppers for 25 minutes until charred, flip eggplant halfway through roasting for about 20 minutes.
  3. Transfer the roasted veggies to a bowl to cool. Peel skins off peppers, remove seeds, and chop into strips. Slice cooled eggplant into ¼-inch rounds.
For the Sauce
  1. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add chopped onions and minced garlic, cooking until translucent, about 5 minutes.
  2. Stir in tomato paste, a pinch of cinnamon, salt, and pepper. Add the roasted peppers and ¼ cup water, simmer gently for 10 minutes.
For the Béchamel Topping
  1. In a saucepan, melt butter and whisk in flour for 2 minutes until smooth. Gradually pour in warm milk while whisking until silky and thick.
  2. Season with nutmeg and salt, then stir in half the Parmesan.
Assemble & Bake
  1. Spoon half the pepper sauce into a baking dish, layer with eggplant rounds, repeat layers and finish with béchamel.
  2. Bake at 375°F for 30–35 minutes until golden and bubbling. Let rest for 10 minutes before slicing.
