Preparation
- Preheat oven to 400°F. Arrange sliced eggplant and halved red peppers on a lined sheet, drizzle with olive oil, and season lightly with salt.
- Roast the red peppers for 25 minutes until charred, flip eggplant halfway through roasting for about 20 minutes.
- Transfer the roasted veggies to a bowl to cool. Peel skins off peppers, remove seeds, and chop into strips. Slice cooled eggplant into ¼-inch rounds.
For the Sauce
- Heat 2 tablespoons of olive oil in a skillet over medium heat. Add chopped onions and minced garlic, cooking until translucent, about 5 minutes.
- Stir in tomato paste, a pinch of cinnamon, salt, and pepper. Add the roasted peppers and ¼ cup water, simmer gently for 10 minutes.
For the Béchamel Topping
- In a saucepan, melt butter and whisk in flour for 2 minutes until smooth. Gradually pour in warm milk while whisking until silky and thick.
- Season with nutmeg and salt, then stir in half the Parmesan.
Assemble & Bake
- Spoon half the pepper sauce into a baking dish, layer with eggplant rounds, repeat layers and finish with béchamel.
- Bake at 375°F for 30–35 minutes until golden and bubbling. Let rest for 10 minutes before slicing.
