Method
 

For the Dip
  1. Preheat the oven to 400°F. Place garlic bulbs wrapped in foil on a baking sheet and roast until soft and caramelized, about 30–35 minutes.
  2. Unwrap the roasted garlic and squeeze the cloves into a small bowl.
  3. In a food processor, combine cannellini beans, roasted garlic, olive oil, lemon juice, salt, and pepper. Process until super-smooth and creamy.
  4. Taste and adjust the seasoning with more lemon juice, salt, or pepper as needed.
For the Sourdough
  1. Cut sourdough loaf into ½-inch slices and brush lightly with olive oil on both sides.
  2. Place slices on a baking sheet and toast under the broiler or in the oven at 375°F for 5–7 minutes until golden-brown.
  3. Spoon dip into a bowl, surround with warm sourdough slices, and enjoy.
