Preparing the Green Beans
- Trim the green beans by snapping off both ends.
- Blanch the beans in a pot of salted boiling water for 2 minutes. Drain and immediately plunge into ice water.
Making the Sauce
- Mix soy sauce, rice vinegar, and honey in a small bowl.
- Heat sesame oil in a large skillet over medium-high heat.
Cooking the Green Beans
- Sauté minced garlic and ginger for 30 seconds.
- Add the blanched beans to the skillet, tossing gently for 2 minutes.
- Pour the sauce over beans and cook for 1 minute.
Garnishing
- Sprinkle toasted sesame seeds and chopped scallions if desired.
