Cooking Instructions
- Warm 1 tablespoon oil in a large skillet over medium heat until shimmering.
- Season chicken with salt, pepper, and paprika. Sear 3–4 minutes per side until golden. Transfer to a plate and set aside.
- In the same skillet, add onions and garlic. Cook over medium heat 2–3 minutes until translucent.
- Stir in rice and pour in chicken broth. Bring to a simmer and season lightly.
- Nestle browned chicken back on top. Cover and reduce heat to low. Simmer 18–20 minutes until rice absorbs liquid.
- Remove lid, add cream cheese and milk around chicken, then sprinkle cheddar on top. Cover until cheese melts.
- Let rest off heat for 5 minutes. Sprinkle with parsley before serving.
