- Preheat your oven to 375°F and position the rack in the center.
- Line a loaf pan with parchment or brush lightly with olive oil to prevent sticking.
- In a large bowl, gently mix ground turkey, chopped sun-dried tomatoes, breadcrumbs, egg, minced garlic, grated Parmesan, diced onion, parsley, oregano, salt, and pepper until just combined.
- Transfer the mixture to the prepared pan and gently press it into an even, compact loaf shape.
- Brush tomato paste or marinara sauce evenly over the loaf’s surface.
- Place in the center rack and bake at 375°F for 45–50 minutes until the internal temperature reaches 165°F.
- Let the meatloaf rest for 10 minutes before removing it from the pan and slice.
