How to Make Mediterranean Turkey Meatloaf with Spinach
- Preheat oven to 375°F, line a loaf pan with parchment paper.
- In a large bowl, add ground turkey, chopped spinach, crumbled feta cheese, diced onion, minced garlic, egg, breadcrumbs, parsley, oregano, salt, and pepper. Mix until just combined.
- Transfer mixture into prepared pan, pressing gently to form an even loaf.
- Place in oven at 375°F for 45 minutes, until internal temp reaches 165°F and top turns golden brown.
- Whisk together tomato paste, honey, red wine vinegar, and oregano until smooth.
- Remove meatloaf after 35 minutes, brush half of the glaze over the top, then bake 10 more minutes.
- Let rest 10 minutes outside the oven.
- Slice into six or eight portions and serve.
