  • 1 pound Ground turkey use lean turkey for a healthy base
  • 2 cups Fresh spinach finely chopped
  • 4 ounces Feta cheese crumbled
  • 1 medium Onion finely diced
  • 2 cloves Garlic cloves minced
  • 1 large Egg acts as binder
  • 1 cup Breadcrumbs whole wheat or panko preferred
  • 1/4 cup Fresh parsley chopped
  • 1 teaspoon Dried oregano
  • Salt to taste Salt
  • Pepper to taste Pepper
For the Tomato Glaze
  • 1 cup Tomato paste
  • 1 tablespoon Honey
  • 1 tablespoon Red wine vinegar
  • 1 teaspoon Dried oregano

Method
 

How to Make Mediterranean Turkey Meatloaf with Spinach
  1. Preheat oven to 375°F, line a loaf pan with parchment paper.
  2. In a large bowl, add ground turkey, chopped spinach, crumbled feta cheese, diced onion, minced garlic, egg, breadcrumbs, parsley, oregano, salt, and pepper. Mix until just combined.
  3. Transfer mixture into prepared pan, pressing gently to form an even loaf.
  4. Place in oven at 375°F for 45 minutes, until internal temp reaches 165°F and top turns golden brown.
  5. Whisk together tomato paste, honey, red wine vinegar, and oregano until smooth.
  6. Remove meatloaf after 35 minutes, brush half of the glaze over the top, then bake 10 more minutes.
  7. Let rest 10 minutes outside the oven.
  8. Slice into six or eight portions and serve.
