Cooking Instructions

  2. Remove from heat, stir in couscous, cover pan, and let it steam undisturbed for 5 minutes until grains absorb all liquid and look tender.
  3. Uncover and gently fluff couscous with a fork to separate grains and achieve the light texture.
  4. In a small bowl, combine fresh lemon juice, lemon zest, chopped parsley, mint, and green onions until vibrant.
  5. Pour the lemon-herb mixture over couscous, tossing gently to coat every grain; season with black pepper to taste.
  6. Transfer dressed couscous to a serving bowl, then sprinkle with toasted pine nuts and crumbled feta.
