Preparation Steps
  1. Preheat your oven to 350°F (175°C) and position the rack in the middle.
  2. Lightly spray a 12-cup muffin tin with non-stick spray or brush with oil.
  3. In a bowl, vigorously whisk egg whites with salt and pepper until slightly frothy, about 1 minute.
  4. Gently stir in diced bell peppers, chopped spinach, and halved cherry tomatoes until evenly distributed.
  5. Sprinkle chopped parsley or chives and optional grated cheese into the mixture and stir gently.
  6. Divide the batter evenly among the prepared cups, filling each about three-quarters full.
  7. Bake at 350°F (175°C) for 18–20 minutes, or until the tops are lightly golden.
  8. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack.
