For the Calamari
  • 1 pound Fresh calamari Choose whole tubes and tentacles.
  • 2 tablespoons Extra-virgin olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Garlic and Parsley Dressing
  • 3 cloves Fresh garlic Minced.
  • 1/4 cup Fresh parsley Chopped.
  • 1/2 teaspoon Red pepper flakes Optional.
  • 2 tablespoons Extra-virgin olive oil For dressing.

Preparation
  1. Rinse calamari under cold water and pat dry with paper towels.
  2. In a mixing bowl, toss calamari with extra-virgin olive oil, lemon juice, salt, and pepper. Marinate for 10-15 minutes.
  3. Preheat grill to medium-high (about 400°F) and lightly oil the grates.
  4. Place calamari on the grill and cook for 2 minutes per side until opaque.
Garlic and Parsley Dressing
  1. In a bowl, whisk together minced garlic, chopped parsley, red pepper flakes, and extra-virgin olive oil until fragrant.
  2. Arrange grilled calamari on a platter and drizzle with garlic-parsley dressing. Garnish with lemon wedges.
