Ingredients
  

For the Skewers
  • 1 large Cucumber sliced
  • 8 ounces Feta cheese cubed
  • 1 cup Kalamata olives pitted
For the Dressing (optional)
  • 2 tablespoons Extra virgin olive oil
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Dried oregano
  • to taste Sea salt
  • to taste Black pepper

Method
 

Preparing the Skewers
  1. Slice cucumber into 1/4-inch rounds, pat dry with paper towels.
  2. Alternate cucumber slice, feta cube, and Kalamata olive on each skewer.
  3. Arrange skewers on a plate, then refrigerate for 15 minutes.
Making the Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  2. Drizzle dressing over skewers or serve on the side for dipping.
