Method
 

For the Marinade
  1. Combine beef strips, grated ginger, minced garlic, soy sauce, sesame oil, brown sugar, and cornstarch in a bowl until every strip is glossy and well coated.
  2. Marinate covered in the fridge for at least 15 minutes to deepen the flavor.
For Cooking
  1. Heat vegetable oil in a large skillet or wok over high heat until shimmering.
  2. Sear beef strips in a single layer for 1–2 minutes per side until edges are lightly charred but still juicy.
  3. Garnish with sliced green onions and sesame seeds, then serve immediately over steamed rice or noodles.
