Preparation
- Slice the halloumi into uniform sticks about 1/2-inch thick, then pat dry with paper towels.
- In one bowl, whisk flour, cornstarch, and a pinch of salt; in another, beat the eggs until smooth.
- Dredge each halloumi stick first in flour, then in egg, and back into flour, pressing gently.
- Warm oil in a skillet over medium heat until shimmering.
- Fry the coated halloumi sticks in batches, 2-3 minutes per side until golden brown, then drain on paper towels.
Dip Preparation
- In a bowl, stir together Greek yogurt, minced garlic, fresh mint, and lemon juice until smooth.
- Season with salt and pepper to taste and refrigerate for at least 10 minutes.
- Serve the hot fries garnished with additional mint alongside the mint yogurt dip.
