Halloumi Fries
  • 1 block Halloumi Cheese Choose a firm block for perfect slicing and frying
  • 1/2 cup Plain Flour Lightly coats the fries
  • 1/4 cup Cornstarch Adds extra crispness
  • 2 large Eggs Bind the coating to the halloumi
  • 1/2 cup Olive Oil For frying
Mint Yogurt Dip
  • 1 cup Greek Yogurt Thick and creamy
  • 1/4 cup Fresh Mint Leaves Finely chopped
  • 1 tablespoon Lemon Juice Adds a bright tang
  • 1 clove Garlic Minced
  • Salt & Pepper To taste

Method
 

Preparation
  1. Slice the halloumi into uniform sticks about 1/2-inch thick, then pat dry with paper towels.
  2. In one bowl, whisk flour, cornstarch, and a pinch of salt; in another, beat the eggs until smooth.
  3. Dredge each halloumi stick first in flour, then in egg, and back into flour, pressing gently.
  4. Warm oil in a skillet over medium heat until shimmering.
  5. Fry the coated halloumi sticks in batches, 2-3 minutes per side until golden brown, then drain on paper towels.
Dip Preparation
  1. In a bowl, stir together Greek yogurt, minced garlic, fresh mint, and lemon juice until smooth.
  2. Season with salt and pepper to taste and refrigerate for at least 10 minutes.
  3. Serve the hot fries garnished with additional mint alongside the mint yogurt dip.
