- Preheat your oven to 375°F (190°C) for about 10 minutes until it’s evenly heated.
- Halve bell peppers lengthwise, remove seeds and membranes, then brush each with olive oil.
- Heat olive oil in a skillet on medium, sauté garlic for 30 seconds, then add spinach until wilted.
- In a bowl, mix ricotta, Parmesan, sautéed spinach, salt, and pepper until silky smooth.
- Spoon the creamy ricotta mixture into each pepper half, pressing gently to fill completely.
- Arrange stuffed peppers in a baking dish and bake at 375°F for 18–20 minutes until golden.
- Let peppers rest 5 minutes, then garnish with fresh basil or parsley and serve warm.
