  • 2 cups Sweet corn kernels fresh or frozen
  • 1 medium Yellow onion finely chopped
  • 2 cloves Garlic minced
  • 2 medium Potatoes diced small
  • 4 cups Chicken broth low-sodium
  • 1 cup Heavy cream folded in at the end
  • 2 tbsp Butter for sautéing
Seasonings & Garnish
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tbsp Fresh thyme or parsley chopped
  • 1 tsp Smoked paprika optional

Preparation Steps
  1. Melt butter in a large pot over medium heat, add onion and garlic, cook 3–4 minutes until soft and fragrant.
  2. Stir in diced potatoes and chicken broth, bring to a gentle simmer for 10 minutes until potatoes begin to tenderize.
  3. Nestle chicken breast into simmering broth, cover pot, and cook 8–10 minutes until fully cooked and opaque.
  4. Remove chicken, shred with forks, then return meat to pot along with sweet corn kernels.
  5. Continue simmering 5 minutes until corn is tender and flavors marry in the broth.
  6. Reduce heat to low, pour in heavy cream, warm gently for 2 minutes until silky—avoid boiling.
  7. Season with salt, pepper, and smoked paprika, then sprinkle fresh thyme or parsley on top.
