How to Make Chili Garlic Noodles
  1. Bring salted water to a rolling boil, add noodles, cook until al dente (8–10 minutes). Drain, drizzle with oil, and set aside to prevent sticking.
  2. Warm 2 tablespoons oil in a large skillet over medium heat until shimmering, about 1 minute.
  3. Add a generous amount of freshly minced garlic, stirring constantly until fragrant and lightly golden, about 1 minute.
  4. Stir in red chili flakes and let them sizzle for 30 seconds.
  5. Pour in soy sauce, a pinch of sugar, and rice vinegar, stirring until the mixture is glossy, about 20 seconds.
  6. Add cooked noodles to the skillet, tossing continuously so every strand is coated in the sauce. Cook for 1–2 minutes.
  7. Fold in green onions and any optional veggies or protein, cooking until warmed and vibrant. Transfer to plates, garnish with extra chili flakes, and serve immediately.
