How to Make Chili Garlic Noodles
- Bring salted water to a rolling boil, add noodles, cook until al dente (8–10 minutes). Drain, drizzle with oil, and set aside to prevent sticking.
- Warm 2 tablespoons oil in a large skillet over medium heat until shimmering, about 1 minute.
- Add a generous amount of freshly minced garlic, stirring constantly until fragrant and lightly golden, about 1 minute.
- Stir in red chili flakes and let them sizzle for 30 seconds.
- Pour in soy sauce, a pinch of sugar, and rice vinegar, stirring until the mixture is glossy, about 20 seconds.
- Add cooked noodles to the skillet, tossing continuously so every strand is coated in the sauce. Cook for 1–2 minutes.
