Method
 

Directions
  1. Marinate Cauliflower: Toss cauliflower florets with yogurt, garlic paste, ginger paste, garam masala, turmeric, and Kashmiri chili. Cover and let rest for at least 30 minutes.
  2. Roast Florets: Preheat oven to 400°F. Spread marinated florets on a parchment-lined sheet, drizzle oil, and roast for 20 minutes until golden brown.
  3. For the Sauce: Warm oil in a skillet, add cumin seeds until they sizzle, then stir in chopped onion. Cook 5 minutes until soft and golden.
  4. Add Tomato & Spice: Pour in tomato puree, sprinkle chili powder and extra garam masala. Simmer for 5 minutes.
  5. Incorporate Cream: Stir in heavy cream or coconut cream, blending until creamy pink. Let bubble gently for 2 minutes.
  6. Combine & Simmer: Add the roasted cauliflower to the sauce and simmer for 3–4 minutes.
