Method
 

Preparing the Homemade Mozzarella
  1. In a large pot, slowly heat whole milk to 90°F over medium heat, stirring gently.
  2. Dissolve citric acid in ¼ cup cool water, then whisk into milk until small curds appear.
  3. Gently mix dissolved rennet into warm milk and let sit undisturbed for 5 minutes.
  4. Use a long knife to slice curds into ½-inch cubes and let rest for 5 minutes.
  5. Heat curds in 170°F water for 1 minute, then stretch and fold until glossy.
  6. Sprinkle cheese with salt, kneading gently, then form into a ball and chill.
Assembling the Salad
  1. Cut ripe tomatoes and mozzarella into ¼-inch slices, arranging them in a circular pattern.
  2. Pour olive oil over the tomatoes and cheese, sprinkle with salt and pepper.
  3. Tuck basil leaves between layers, drizzle with balsamic glaze, and serve immediately.
