Method
 

Preparation
  1. Preheat your oven to 425°F and line a baking sheet with parchment paper or grease it.
  2. In a large bowl, whisk together the flour, cornstarch, garlic powder, smoked paprika, salt, and pepper. Gradually add water to achieve a smooth batter.
  3. Dip each cauliflower floret into the batter, ensuring it's fully coated, then arrange in a single layer on the baking sheet.
  4. Bake for 20 minutes, flipping halfway until golden brown and crisp.
Buffalo Sauce
  1. In a separate bowl, whisk hot sauce, melted butter, honey, Worcestershire, and apple cider vinegar until smooth.
  2. Transfer baked cauliflower to a large bowl, pour the Buffalo sauce over it, and toss until coated.
  3. Spread the sauced florets back onto the baking sheet and bake for an additional 5-7 minutes.
  4. Serve warm, optionally garnished with chopped chives and a side of ranch or blue cheese dressing.
