Preparation
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Press extra-firm tofu between clean kitchen towels for 15 minutes.
- Cube the tofu into 1-inch pieces and toss with cornstarch and neutral oil.
For the Glaze
- Whisk soy sauce, maple syrup, garlic, ginger, rice vinegar, and sesame oil until smooth.
- Toss tofu cubes in half of the glaze, reserving the rest for brushing.
- Bake tofu cubes for 25–30 minutes, flipping and brushing with glaze halfway.
- Rest the baked tofu for 5 minutes before serving.
