Preparation
- Press the extra-firm tofu between paper towels with a heavy pan on top for about 15 minutes to remove moisture.
- Coat the drained cubes in a bowl with olive oil and cornstarch, tossing gently.
- Arrange the coated tofu evenly on a parchment-lined baking sheet, then bake at 400°F for 25–30 minutes, flipping once halfway.
Making the Glaze
- Whisk together low-sodium soy sauce, maple syrup, rice vinegar, minced garlic, and grated ginger in a small saucepan; heat gently over low flame for 2–3 minutes.
- Gently pour the warm glaze over the baked tofu cubes, turning to coat; bake an additional 5 minutes at 400°F.
Serving
- Top with sesame seeds and scallions if desired.
