  • 8 ounces Dry pasta Choose penne or fusilli that holds the sauce well

For Serving & Garnish

Method
 

Preparation
  1. Preheat oven to 400°F (200°C) and line a medium baking dish with foil.
  2. Scatter cherry tomatoes and smashed garlic cloves around a block of feta. Drizzle with olive oil and season with salt and pepper.
  3. Roast for 30 minutes until tomatoes burst and feta turns golden.
  4. Meanwhile, boil pasta in salted water until just al dente (about 8 minutes), then drain, reserving ½ cup of pasta water.
  5. Once feta and tomatoes are roasted, stir the hot pasta into the baking dish, tossing gently to coat.
  6. Garnish with fresh basil and red chili flakes, then serve warm.
