For the Stir-Fry
  • 1 pound beef sirloin thinly sliced
  • 2 cups fresh snow peas
  • 2 cloves garlic minced
  • 1 inch ginger root finely grated
  • 1 tablespoon vegetable oil high smoke point
For the Sauce
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
Optional Garnishes
  • 1 tablespoon sesame seeds toasted
  • 2 tablespoons green onions thinly sliced

Method
 

Instructions
  1. Whisk together soy sauce, oyster sauce, brown sugar, cornstarch, and water in a small bowl until smooth.
  2. Pat beef dry, then slice thin against the grain. Trim snow peas, mince garlic, and grate ginger.
  3. Heat vegetable oil in a large wok or skillet over high heat until shimmering.
  4. Add beef in a single layer, cooking undisturbed for 1 minute until edges are golden, then stir-fry for another minute until just browned.
  5. Push beef to one side, add garlic and ginger, stir constantly for 30 seconds.
  6. Add snow peas and stir-fry for 1–2 minutes until bright green and crisp-tender.
  7. Stir sauce mixture, pour over beef and peas, cook 1 minute, stirring constantly until sauce thickens.
  8. Remove from heat, transfer to serving plates, and sprinkle with green onions and sesame seeds.
