How to Make Parmesan Zucchini Fries
  1. Preheat the oven to 425°F and line a baking sheet with parchment.
  2. Cut 2 medium zucchinis into 1/2-inch sticks, then pat dry.
  3. Combine panko breadcrumbs, grated Parmesan, garlic powder, Italian seasoning, salt, and pepper in a shallow bowl.
  4. Coat each zucchini stick in flour, dip in beaten egg, then press into the Parmesan-panko mixture.
  5. Arrange fries on the sheet, spacing at least 1/2 inch apart, and bake for 20–25 minutes.
  6. Garnish with chopped parsley and serve immediately with warm marinara sauce.
