  • 1 tablespoon Olive Oil light drizzle
  • 1 teaspoon Ground Cumin for flavor
  • 1 teaspoon Smoked Paprika for depth

For the Pomegranate Topping
  • 1 cup Fresh Pomegranate Seeds for topping
  • 2 tablespoons Fresh Mint Leaves chopped

  • 1 cup Greek Yogurt or Labneh for serving
  • 1/4 cup Toasted Pine Nuts for added crunch

Preparation
  1. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. Slice a medium eggplant into ½-inch thick rounds.
  3. Place the eggplant slices in a bowl, drizzle with olive oil, then toss with ground cumin, smoked paprika, salt, and pepper.
  4. Arrange the seasoned eggplant rounds in a single layer inside the air fryer basket.
  5. Cook the eggplant rounds at 400°F (200°C) for 12–15 minutes, flipping them halfway through.
Topping and Serving
  1. In a small bowl, gently stir fresh pomegranate seeds with chopped mint leaves and a pinch of salt.
  2. Transfer the hot eggplant rounds to a serving platter and sprinkle the pomegranate-mint mixture over the top.
  3. Optionally, add a dollop of yogurt or sprinkle toasted pine nuts before serving.
